This pineapple sheera is not only low in calories but is extremely nutritious. Jaggery is an excellent source of iron and pineapple is a rich source of vitamin C.
Ingredients:
1 cup pineapple puree 3 tablespoons jaggery 1 tablespoon ghee 1 cup semolina (rawa, sooji) 1 cup low-fat milk A few saffron strandes (kesar) dissolved in 2 tablespoons low-fat milk ½ tsp cardamom (elaichi) powderMethod:
Combine the pineapple puree and 2 tablespoons of jaggery in a pan. Mix well and cook on a medium flame for 3-4 minutes while stirring continuously. Keep aside. Heat the ghee in a deep kadhai or pan, add the semolina and mix well. Saute on a medium flame for 5 to 7 minutes till it is light pink in colour while stirring continuously. Add the remaining jaggery, mix well and cook on a medium flame for 1 to 2 minutes till the mixture is dry. Add the prepared pineapple mixture, mix well and cook on a low flame for 2-3 minutes while stirring continuously. Add the saffron-milk mixture and cardamom powder. Mix well and cook for 1 to 2 minutes while stirring continuously. Now sprinkle a few strands of saffron in a glass bowl, add the prepared sheera and mould it on a serving plate. Serve immediately.You can also hog on this healthy modakand multigrain laddoowithout going on a guilt trip.
